DND Ramadhan Healthy Veggie Roll

Today we shall have a bonus addition of our weekly posts. Yes, we shall share the not kept secret recipe of DND Ramadhan Healthy Veggie Roll! Ok, lets roll...

Ingredients:

First, the ingredients ...

DND Ramadhan Healthy Veggie Roll

4 whole-meal wrappers

2 cups of mixed salad greens

1 medium eggplant, sliced

1 cup of sliced mushrooms

1 avocado, sliced

1 small onion, sliced

1/2 cup of Greek yogurt

2 tablespoons of chili sauce

Instructions:

Preheat your oven to 375°F.

On a baking sheet, place the sliced eggplant and mushrooms. Drizzle with a little bit of olive oil and sprinkle with salt and pepper. Roast for 10-15 minutes or until tender and lightly browned.

In a skillet over medium heat, sauté the sliced onions until they are caramelized and golden brown, about 5 minutes.

Assemble the rolls by placing a whole-meal wrapper on a clean surface.

Spread a spoonful of Greek yogurt over the wrapper, leaving a little bit of space around the edges.

Add a handful of mixed salad greens on top of the Greek yogurt.

Layer the sautéed eggplant, mushrooms, onions, and sliced avocado on top of the salad greens.

Drizzle chili sauce over the top of the filling.

Roll the wrap tightly, tucking in the edges as you go.

Slice the roll into bite-sized pieces, and serve immediately.
